Here's a recipe that we just learned about...it is delectable! If you like pasta...
prep time: 1 hour makes: two 9X13 pans
PENNE RUSTICA (Macaroni Grill's)
1 lb. grilled chicken
1/2 package bacon (cooked)
2 boxes penne pasta (cooked and drained)
2 large red bell peppers (diced)
1 cup grated pamesan cheese
1 cup mozzarella cheese
1/2 tsp paprika
Marinate chicken in olive oil and garlic salt overnight, then grill on barbecue for best flavor. Cut into bite size pieces. Cook bacon, boil pasta, set aside.
Gratinata Sauce:
1 TB butter
1 TB olive oil
2 tsp chopped garlic
SAUTE the above ingredients
ADD: 1/3 cup apple juice
2 TB red wine vinegar
1 cup chicken broth
1 tsp dijon or dry mustard
1 tsp salt
1 tsp chopped rosemary (fresh is better)
1/4 tsp cayenne pepper
8 cups heavy cream (or part fat free 1/2 and 1/2)
SIMMER 10 minutes, stirring often.
COMBINE:
Sauce, cooked pasta, diced chicken, cooked bacon, bell peppers, and 3/4 of the cheeses. Spread in pans. top with the remaining cheese and paprika.
BAKE: @ 475 for 10 minutes. Then reduce heat to 400 and continue baking for approximately 15 minutes...until cheeses are hot and bubbly.
Will make two 9X13 pans. Freeze one for another meal. Cover tightly with foil and use within 1 month for best results.
